Merlin’s
Chef Hado Steinbrecher used to be an international journalist and
as such he was one of those people who restaurant owners often dread,
because he wrote among other things, cuisine critics.
Since
over a decade now he has his own restaurant and he has to
prove every day, that he knows what good cuisine is all about.
The
Merlin o Mago was awarded a long time ago the first star;
its kitchen quickly won prizes and the press wrote very favorably
about it, but the Chef knows very well who are the most important
critics, the guests, coming to his open kitchen, expressing satisfaction
or showing interest in his ways of preparation, and the Gourmets
who keep coming back: those are the true judges for him.
He
describes his way of cooking as disciplined by French rules, strongly
influenced by his Asian experiences and always tempted by Italian
and Spanish elements. The stubbornness he demonstrates if he is
after a certain result shows the German origin. But the fact that
he lives and works in Brazil, in this little paradise named Paraty,
means that above all he is a cosmopolitan and a passionate Gourmet.
